Issue with Calendar Update Notifications?

Anytime I alter any aspect of an outlook calendar item, it sends an update to all members of the item, but it sends it with a huge string of chinese characters as the message body...

For example;

Is there a setting that's causing this? Or a bug? Looking for a way to eliminate this from happening.

It also gets rid of any information that was in the message description of the calendar item. Honestly not sure if I have classic outlook or new outlook (re: tags on post).
